3 pounds red potatoes
1 red onion, cut into thick slices
1 tbls coriander seed
Pinch cumin seed
1 tbls oregano
2 serrano chiles
3 slices bacon, fried crisp and crumbled
1 bunch cilantro leaves, coarsely chopped
