SWEET AND SPICY BOURBON PECAN BALLS

1 egg white
1 tbls bourbon
3 cups pecan halves
1/2 cup sugar
1/2 tsp salt
1/4 tsp cayenne pepper
Line a large baking sheet with foil. Thick egg until frothy, stir in pecans. Mix together dry ingredients. Sprinkle over nuts; spread in one layer on baking sheet. Bake at 350, stirring often until browned. They will crisp after cooling. Stir in air tight container.
CHICKEN WITH PEANUT SAUCE
Olive oil
1 pound boneless chicken, cut in bite sized pieces
1/2 cup smooth peanut butter
1/4 tsp red pepper flakes
1 Tbls soy sauce
1 clove minced garlic
1 tsp curry sauce
1/4 cup chicken broth
Cooked rice
Thread chicken on skewers. Brush with olive oil. Grill until almost done. Heat all other ingredients until smooth. Brush over chicken. Grill until done. Serve chicken with sauce over rice.
PEPPER STEAK
3 pounds sirloin, sliced
4 green peppers, cut in narrow strips
2 onions, cut in wedges
3 stalks celery, cut in chunks
2 tomatoes, cut in wedges
1/2 cup soy sauce
1 can beef broth
8 oz sliced mushrooms
Cooked rice
Season cut up steak with salt and pepper. Saute in hot oil until brown. Add onions, celery, peppers and mushrooms. Add broth and soy sauce. Cook for 45 minutes or until meat is tender. Add tomatoes during last 10 minutes. Serve over rice.
CRAWFISH CREOLE
1/3 cup butter
1/4 cup flour
1 pound crawfish tail meat
1 clove garlic, minced
1/2 cup onion, minced
2 Tbls parsley, chopped
1/2 cup chopped bell pepper
1 cup water
2 tsp salt
2 bay leaves
1/2 tsp cayenne pepper
8 oz can tomato paste
Cooked rice
Melt butter in heavy skillet. Ad flour and stir nil light brown. Add crawfish and cook for 3 minutes. Add garlic, onion, parsley and cook 2 more minutes. Increase heat and add other ingredients. Simmer covered for 30 minutes. Serve over rice.
SPINACH RICE BALLS
1 cup cooked rice
10 oz frozen chopped spinach, thawed and drained
1 cup herb-seasoned stuffing mix, crushed
1/2 cup parmesan cheese
1/2 cup shredded cheddar
3 egg whites
1/4 finely chopped onion
Salt and pepper
Mix all ingredients in a bowl. Shape into 1 inch balls. Place on greased cookie sheet. Bake at 350 for 12 minutes until set. Makes 40.

1/2 bottle jet dry
4 tbls rubbing alcohol
1/2 cup ammonia
1 handful powdered dishwashing detergent
1 gallon hot water
Mix together; spray on windows. Dip long-handled brush in solution and scrub thoroughly. Rinse. Done!
