HOT SHRIMP DIP
8 oz cream cheese
1/3 cup mayonnaise
1/4 cup sour cream
1 1/4 cup shredded cheddar, divided
1 1/4 cup shredded pepper jack, divided
1/2 tbls Old Bay Seasoning
1 tsp worcestershire
3-4 dashes hot sauce
1 pound cooked, coarsely chopped shrimp
2 cloves minced garlic
3 green onions, sliced
Blend together first 8 (1/2 of cheeses) ingredients. Stir in shrimp, garlic and green onions. Spoon in baking dish and top with remaining cheese. Bake at 375 until bubbly.
CARAMEL LAYERED COOKIE BARS
Cookie:
2 1/4 cups flour
1 tsp soda
1 tsp salt
1 cup butter
3/4 cup sugar
3/4 cup brown sugar
1 tsp vanilla
2 eggs
2 cups chocolate chips
CARAMEL:
5 oz evaporated milk
14 oz caramels
1/2 cup peanut butter
Cream butter and sugars. Add vanilla and eggs. Add dry ingredients and mix. Fold in chips. Spread 1/2 batter in greased 9X13 dish. Bake at 375 for 10 min. Heat milk and melt caramels; add peanut butter. Remove cookie layer from oven and pour caramel layer over. Place remaining cookie dough over caramel in spoonfuls. Bake at 350 for 25 minutes until browned. Allow to stand for 10 minutes before cutting into bars.

1 quart pineapple juice
3 quarts unsweetened tea
1 quart water
2/3 cup lemon juice
2 cups sugar
Heat water and dissolve sugar. Add other ingredients and stir well. Chill.

CHEESE DIP
1 stick butter
3/4 cup flour
3 1/2 cups water (yes, recipe calls for water)
1 pound grated American cheese
2 tbls cumin
Pinch garlic powder
1 tbls chili powder
Melt butter; add flour and stir until bubbly. Add water and stir until smooth and thick. Add cheese and stir until melted. Add seasonings. Simmer for 10 minutes.
STREET CORN
1/2 cup crumbled Cotjita or feta cheese, plus more for serving
1/4 cup mayonnaise
1/4 cup Mexican cream or sour cream
1/4 cup chopped fresh cilantro
1/2 tsp Chile powder, plus more for serving
1 minced garlic clove
4 ears shucked corn
Lime wedges
Combine cheese, mayonnaise, sour cream (crema), cilantro, chile powder and garlic. Heat grill. Place corn on grill and cook, rotating, until charred for 8 minutes. Transfer corn to cheese mixture. Evenly coat corn on all sides with mixture. Sprinkle with cheese and Chile powder. Serve immediately with lime wedges.
BACON BROWN SUGAR GARLIC CHICKEN
4 boneless breasts
2/3 cup brown sugar
3 cloves garlic, minced
1/2 tsp kosher salt
1/4 tsp pepper
10-12 slices bacon
Mix together brown sugar, garlic, salt and pepper. Add chicken and toss to coat. Wrap each breast in bacon. Put breasts in baking dish, cover with remaining brown sugar mixture. Bake at 375 for 30 minutes.
