1 pound andouille sausage, sliced or 1 pound raw chicken breast, cut into chunks
3/4 cup chopped onion
3/4 cup chopped green and red bell pepper
3/4 cup chopped celery
1/2 cup uncooked rice
1 tsp minced garlic
Salt and pepper to taste
Cayenne to taste
2 1/2 cups chicken broth
