ASPARAGUS STUFFED CHICKEN BREAST
4 boneless chicken breasts
1 tso Italian seasoning
1 tsp garlic powder
1 tsp smoked paprika
Sea salt and pepper
12 asparagus stalks, ends trimmed
1 oz sun dried tomatoes, chopped
4 slices mozzarella cheese
1 tbls olive oil
Place chicken breasts on cutting board; flatten. Sprinkle both sides with dry ingredients. Place 3 pieces asparagus on each breast, a few pieces of tomato and a slice of mozzarella. Roll up and secure with toothpick. Saute in oil until browned. Transfer to a baking sheet and bake at 400 for 15 minutes.
PEACH POUND CAKE
1 cup butter
2 cups sugar
4 eggs
1 tsp vanilla
3 cups flour
1 tsp baking powder
1/2 tsp salt
2 cups fresh peaches, leaped and chopped
Cream butter and sugar, add eggs and vanilla. Sift together dry ingredients (reserving 1/4 cup flour) and add to batter. Dredge peaches in 1/4 cup flour and gentle fold in. Pour into greased tube pan. Bake at 325 for 1 hour until a toothpick comes clean.
FRIED RICE
3 cups cooked rice
1 tbls sesame oil
1 cup frozen peas and carrots
1 small onion, chopped
1 tsp minced garlic
2 eggs, slightly beaten
1/4 cup soy sauce
Heat oil on high. Add peas, carrots, onion and garlic. Stir until tender, and push aside. Add eggs and stir fry until scrambled. Add rice and soy sauce. Stir until blended. (Shrimp or chicken may be added; stir fry separately and add after rice and soy sauce).
COWBOY BEANS
1 pound ground beef
1 pound bacon, cooked and crumbled
2 tbls bacon drippings
3 cans kidney beans
3 cans white beans
3 cans pork and beans
3 small onions, chopped
1 cup brown sugar
1 cup ketchup
1/2 cup molasses
3 tbls yellow mustard
Brown the beef and onions and drain. Add drained beans and other ingredients. Cook on low for 2 hours. (Slow cooker can be used. Increase time on low to 4 hours).
BEST CHOCOLATE CHIP COOKIES
1/2 pound butter
3/4 cup + 1 tbls sugar
2 eggs
1/4 tsp lemon juice
2 1/4 cups flour
1/2 cup oats
1 tsp soda
1 tsp salt
Pinch cinnamon
2/3 cups semi sweet chips
1 3/4 cup chopped walnuts
Cream butter and sugar. Add eggs and vanilla and beat. Mix together dry ingredients and add, mixing well. Add chips and walnuts. Bake at 375 for 12-15 minutes.
SQUASH PATTIES
2 cups yellow squash grated
1 cup onion, finely chopped
1 egg, beaten
1 tsp salt
1 tsp pepper
1/2 cup + 1 tbls flour
Oil
Mix all ingredients together except oil. Heat oil in skillet. Pat out squash mixture into patties. Fry until golden brown.
