Chicken Spaghetti
2 pounds boneless breasts, cooked and chopped
16 oz spaghetti, cooked and drained
1 can Rotel
2 cans cream of mushroom soup
16 oz Velveeta, cubed
4 oz cream cheese
1 tsp garlic powder
1 tsp onion powder
1 cup shredded cheddar
Combine Rotel, cream of mushroom, Velveeta and cream cheese; heat until melted. Add other ingredients. Top with shredded cheese. Bake at 350 for 20 minutes.
Mexico
Chiquito Cheese Dip
1 stick butter
2 tbls four
1 tsp paprika
1 tsp cumin
1 tsp dry mustard
1/2 tsp garlic powder
Dash of seasoning salt
2 cups milk
1 pound cubed Kraft American cheese
Melt butter; add flour. Add remaining ingredients. Heat until cheese is melted.
PASTRY SHELLS
1/2 cup boiling water
1/4 cup butter
Dash salt
1/2 cup flour
2 eggs
Combine water, butter and salt; bring to a boil. Add flour all at once. Beat vigorously with wooden spoon until mixture forms a ball and leaves the sides of the pan. Remove from heat. Add eggs 1 at a time. Beat until a stiff dough is formed. Drop by teaspoonfuls on greased baking sheet. A pastry bag may be used to form desired shapes. Bake at 450 for 10 minutes; reduce heat to 350 and bake for 10 more minutes. Cool. Wonderful filled with chicken salad!
HOT
MUSTARD SHRIMP
1/3 cup red wine vinegar
1 tsp ketchup
1/4 tsp horseradish
2 tsp dry mustard
2 cloves garlic, minced
Salt and pepper to taste
1/3 cup oil
1-2 pounds shelled, cooked shrimp
Chopped green onion for garnish
Mix first 6 ingredients; blend in oil. Add shrimp. Chill. Garnish with green onion.
RED RICE
4 strips bacon, fried crisp
2 chopped onions
2 chopped bell peppers
1 can diced tomatoes
1 cup tomato sauce
1/2 tsp Tabasco
2 cups cooked rice
Salt and pepper to taste
Parmesan cheese
Brown onion and peppers in drippings. Add other ingredients. Top with cheese. Bake at 325 for 30 minutes. (Shrimp or sausage can be added)
SPIKED APPLE CRISP
5 cups apples, peeled and diced
1/2 tsp cinnamon
1 tsp grated orance peel
1 tsp grated orange peel
1 oz Grand Marnier
1 oz Amaretto
3/4 cup sugar
1/4 cup brown sugar
3/4 cup flour
Dash salt
1 stick butter, softened
Vanilla ice cream or whipped cream
Arrange apples in greased 2 quart casserole. Sprinkle with cinnamon, peels and liquors. Combine sugars, flour, salt and butter; mix until crumbly. Spread over apples. Bake at 350 for 1 hour. Serve warm with ice cream or whipped cream.
